We use coconut milk all the time. We use it in chia puddings, curries, smoothies, baking or drink straight out of the jar! It is such a versatile milk to have I the fridge and it just could not be simpler to make. I can’t take credit for the recipe or the method. I have adapted the Quirky Cooking recipe to suit us and it works a treat.
300g desiccated coconut
Place water and coconut in thermomix. 37 degrees, 5 mins, speed 8.
Once finished pour into a nut bag and squeeze milk into a clean bowl before decanting into a jar.
store in the fridge for up to 5 days.
Use in curries, chia puddings or whatever takes your fancy -x
